“What’s cooking” in Victor’s Kitchen

What would you have done if you were given the following ingredients?

In the picture:

1. Some marinated beef thinly sliced

2. Baby coarse lettuce

3. 10 fresh shiitake mushrooms, stem removed

4. 1 fresh red chili chopped

5. 8 garlic cloves chopped

6. 1 thumb size fresh ginger thinly sliced

7. 10 spring onions cut into 3 sections, roughly 3 inches each

8. 1 cup coriander leaves

9. 1 bunch coriander stems chopped

Well. What would you do with the above ingredients?

Those are the ingredients I bought today for tonight’s dinner. 2 dishes – one stir fry baby coarse lettuce and the other a stir fry beef with shiitake mushroom.

First, I made the beef and mushroom dish, because the baby coarse lettuce takes less than five minutes to cook.

Stir Fry Beef with Shiitake Mushroom

Sauce

1 tablespoon oyster sauce

2 tablespoon fish sauce

1 tablespoon thick caramel sauce

Cooking (estimate – 10 minutes)

1. Heat some cooking oil in a hot wok

2. Toss in beef. Stir fry quickly for 2 minutes. Remove and set aside

3. In the remaining oil, toss in garlic. Fry until fragrant

4. Add mushrooms. Add a bit of chicken stock or water

5. Add beef

6. Add sliced ginger, then the sauces

7. Add spring onion

8. Add some salt and sugar to taste.

9. Garnish with coriander leaves

Stir Fry Baby Coarse Lettuce

Sauce

1 tablespoon light soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

Cooking (estimate – under 4 minutes)

1. Heat some cooking oil in a hot wok

2. Toss in chopped garlic and chili

3. Toss in coarse lettuce

4. Add a bit of chicken stock or water

5. Add the sauces

6. Stir fry quickly. Do not over cooked the lettuce

7. Add some salt and sugar to taste

9. Sprinkle with dried shallots and toasted white sesame seeds (optional)

  1. I would have rung you Victor to see if you make house calls~meals on sports wheels!

  2. Victor, I would make Larb (spicy Thai/Lao beef) and use the vegetables as garnish. Although I never put mushroom in my Larb dish before, but it would be interesting to try.

    You dishes look real good, a perfect meat and vegetable dish.

    • Hey Nye – I think that is an awesome idea – spicy beef larb. I love larb. I think the shiitake mushroom will be okay, but sauteed with some fish/oyster sauce until cooked. Cool down, then thinly slice and add to larb. Haven’t try it myself. But I may do that next time.
