“What’s Cooking” in Victor’s Kitchen

Grilled beef salad. That was what I made last night, dinner for two. Spicy, sourish, sweet, salty and tangy. Lots of mint, coriander and basil herbs. Still have some leftover slices of grilled beef which I mixed with the remaining salad dressing and left in the fridge for an afternoon snack the next day.

Marinate the beef with 1 tablespoon fish sauce, 2 tablespoons oyster sauce and 2 tablespoon vegetable cooking oil. Grilled on both sides, let cool, then slice thinly.

Prepare the dressing – 2 cloves garlic finely chopped, 1 red chili finely chopped, 2 tablespoons sugar, 3 tablespoons fish sauce and 3 tablespoons white vinegar. Add a bit of water if you like the dressing a bit lighter in flavour.

Prepare the salad – 1 baby coarse lettuce roughly chopped into bite pieces, 1 cup coriander leaves, 1 cup mint leaves, 1 cup basil leaves, 3 spring onions finely chopped and 1 shallot finely sliced.

Pour half the dressing over salad, mix well. Plate them. Add some slices of grilled beef on top. Add more dressing on top.
